Easy Chicken Tinga Tacos

I posted these chicken tinga tacos on my instagram feed yesterday and a few friends asked for the recipe. Shannon, Krista and Allison: Here it is! Hope you get a chance to try it!


So there are a lot of great recipes out there for chicken tinga (basically, shredded chicken in a tomato-chipotle sauce), but unfortunately, most of them involve chopping. And some days I’m just not in the mood for chopping (sigh).

On those days, here’s what I do. Pick up these two ingredients and some chicken breasts: Herdez Salsa Casera Mild and Diced Chipotles Peppers in Adobo Sauce.


I use about 1 cup Herdez Mild salsa for every two chicken breasts. Put the chicken in the crock pot and pour the salsa on top. You can in add a few teaspoons of the chipotles if everyone likes it spicy, or add it to individual portions right before serving if some don’t.

Turn on the crock pot and cook until the chicken is done. For two chicken breasts, it takes about two hours on high, but you can adjust if you are cooking more than two breasts or want to leave it on all day.

When the chicken is done, use two forks to shred the chicken. (Because of the slow cooking, it will fall apart really easily.) I add a pinch or two of brown sugar at this point to offset the acidity of the tomatoes, but you can leave out the sugar if you want. Then toss everything together.

And that’s it!

Just transfer to a serving dish and serve with warm tortillas and garnishes, like a margarita. A margarita is pretty much my favorite garnish. It makes everything taste better. It also makes your kids less annoying after 6 o’clock. Magic juice, I tell ya.


You can also serve some “other garnishes” if you want, like guacamole, shredded lettuce, chopped tomatoes, extra salsa, cheese and cilantro-lime sauce.


Last night, I dipped each corn tortilla in a small saucepan of warm oil (this softens the tortilla so you can roll it up, and also gives it great flavor) and then filled it with the chicken tinga and shredded cheese. Then we piled on the toppings and, mmmm, they were so good. The kids gobbled them up, and John declared them his new favorite dish!

    These look so great — my ladies at Merry Maids make a mean tinga & this one sounds so simple & delish! I will make it and see what everyone thinks. I love the “magic juice” btw
    ….anything to help ease the pain of the 6 o’clock hour is worth trying! :)

    I make the original, but will have to give this a try. I like tostada shells and (sounds weird but delicious) a little mayo on top of the shells. I learned the original from my friends mom, she’s from tj…. It’s so addicting. :-)
