Tomato Cucumber Salad

On a hot summer’s day in Texas, there’s nothing better than this cool and refreshing salad. (Except maybe a cool and refreshing margarita, but I digress.) The juicy tomatoes and crunchy cucumbers — combined with sweet basil, a tart vinaigrette and salty feta cheese — are flavorful and satisfying. It couldn’t be easier to make or more functional, either.


Serve it as a simple side dish as part of an easy weeknight meal. Or add a bed of mixed greens and canned tuna for a lovely lunch. If company is coming, serve the salad alongside grilled steaks or salmon for a fabulous alfresco dinner!

Also, this salad is wonderfully adaptable! Add pitted kalamata olives, sliced mushrooms, chopped green onions, steamed broccoli, artichoke hearts or whatever else you have around. To enhance the dressing, try adding minced shallot or garlic, or a drop of dijon mustard for extra flavor. For my kids, I often omit the basil and feta cheese, and add a splash of real maple syrup to the dressing; on a good day, that hint of sweetness is enough to entice them to eat their veggies!
