No-Bake Peanut-Butter Energy Bites

I remember making peanut-butter balls similar to these as a kid: Getting my hands all messy with honey and peanut butter, rolling each sticky mound into a little ball, and then biting into one with a big glass of milk. Now, as a parent, I love these because they are nutritious (high protein, high fiber, low sugar, no fake stuff), and super easy to make (Jack gets to do most of the pouring, mixing and rolling by himself). Plus, they are always ready to enjoy … just sitting in the fridge in an airtight container … which makes them perfect for a quick breakfast or an afternoon snack.

Ingredients

  • 1/4 cup ground chia seeds
  • 1/4 cup ground flax seeds
  • 1 cup dry oats
  • 1/3 – 1/2 cup honey
  • 1/4 cup peanut butter
  • 1/4 cup almond butter
  • 2 teaspoons vanilla
  • Pinch of salt
  • Optional add ins: dried fruit or chocolate chips

Instructions

  • 1. Place all ingredients in a medium bowl. Using a rubber spatula, stir until well-combined. If the mixture is too thick to stir, use your hands.
  • 2. Refrigerate the mixture for at least 20 minutes. Remove from the refrigerator. Using your hands, pull off a small portion of the mixture and shape it into a ball. Place it on a baking sheet lined with wax paper.
  • 3. Repeat the process until all of the mixture is used up. Refrigerate again for 10-20 minutes. Transfer to an airtight container. Enjoy immediately or refrigerate until ready to serve.
